Pascal Jolivet Blanc Fumé 2025

Pascal Jolivet

Blanc Fumé 2025

Blanc Fumé is Pascal Jolivet’s expression of Pouilly-Fumé, bringing together Sauvignon Blanc grown across three distinct soil types. Limestone, flint and clay-limestone each contribute a different dimension, creating a wine that combines richness and complexity with the precision and mineral character associated with the appellation. The estate describes the wine as having a style that is both unique and typical of the house: complex, rich and structured. The philosophy is one of restraint, allowing Sauvignon Blanc and the contrasting soils of Pouilly-Fumé to remain at the center of the wine.

Character

Expressive and precise, with the freshness of Sauvignon Blanc set against a more mineral, restrained character. Rather than exuberant fruit, the impression is one of complexity and depth, reflecting the more structured style Pascal Jolivet identifies with Fume Blanc. On the palate the wine is Rich and composed, with a sense of weight balanced by freshness and mineral tension. The combination of limestone, flint and clay-limestone gives the wine complexity and structure, with a style designed to develop further with time.

Goes well with

Blanc Fumé is particularly at home with seafood and fish, where its freshness and mineral character can come to the fore, but it has enough substance for white meats as well. Pascal Jolivet specifically recommends shellfish, fish and white meat.
